Hereditary fructose intolerance is a congenital defect in metabolism that should not be confused with fructose malabsorption.

This genetic disease is characterized by the inability to metabolize fructose due to mutations in the ALDOB gene

Fructose is a simple sugar, or monosaccharide. It is abundant in fruit and is a component of sucrose. Sucrose, or conventional sugar, is a molecule formed by the union of a molecule of glucose and one of fructose.

Aldolase enzyme is essential for the metabolism of sugar, whereby fructose and glucose are transformed into energy. It is a very important process for the organism, and if it does not work properly there is the accumulation of intermediary molecules with serious consequences.

Fructose intolerance is an autosomal recessive disease. This means that for disease expression, both copies of the gene ALDOB must be mutated. The disease can be transmitted to offspring if both parents are carriers, even if they are not affected.

This disease usually becomes apparent at the beginning of childhood when they begin to incorporate foods with fruit. Exceptionally it has been detected in adults who have not been diagnosed in childhood, but have unconsciously avoided fructose.
